Definition The chemical reactions and pathways resulting in the formation of progoitrin, a 2-hydroxy-but-3-enyl glucosinolate. Glucosinolates are substituted thioglucosides found in rapeseed products and related cruciferae, and progoitrin has been implicated in causing goiters in mammals and bitter taste in cruciferous vegetables.[ PubMed:11560911 PubMed:18945935 ]
