Description
L-iditol 2-dehydrogenases catalyze the oxidation of L-iditol to L-sorbose with the reduction of NAD. These enzymes also act on D-sorbitol and xylitol and convert them to D-fructose and D-xylulose. (Adapted from 10.1006/jcht.1996.0099).
