Glutathione transferases (glutathione S-transferases, GST) catalyze nucleophilic attack by reduced glutathione on non-polar compounds that contain an electrophilic carbon, nitrogen, or sulfur atom. They have roles in detoxifying xenobiotics and metabolites and in biosynthetic processes.
